Byron Bay Apartment Rental team cooks easy home made tomato soup

Once again the Byron Bay Apartment Rental Team took the cooking challenge for a Home Made Roasted Tomato Soup.
Take 3 kilos of the best available tomatoes. Cut them in half. Lay them on a baking tray with 3 large onions cut into quarters. Add 5 cloves of garlic, out of their skins. Toss them all with a large dose of olive oil, salt, pepper and a good drizzle of balsamic vinegar.
Place them in the oven at 200 degrees celcius and roast until slightly browned.
Once cooled slightly, blitz in a food processor and then add some chicken or vegetable stock and either cream or coconut milk to taste.
Voila! Roasted cream of tomato soup! Garnish with freshly torn/chopped basil.
This soup can be served hot or cold. Bon apetit!
